Lucky for us, our quest to add a delicious vegetarian option to our menu led us to Minh Tsai, Hodo Soy's founder and CEO and, as we like to call him, Tofu Master. Minh and Hodo (which means “good bean” in Chinese) partner with farmers in the Midwestern U.S. to buy non-GMO, organic soybeans that turn into the most delicious and creamiest artisanal tofu we can find. That tofu is mixed with our fragrant blend of spices and transformed into our super scrumptious Sofritas (we like alliteration, k?).
